It’s Chili Outside!

So it’s day one of Ziggy and my 30 day running challenge, and let me tell you, where we are it is COLD unless you consider 28 degrees comfortable. To warm up, we decided to cook up some chili! Now, my mom is a champion chili cooker (not really but it’s good) and to compete with her was a difficult task to manage, but here’s how we did it.


  • 2 pounds ground beef
  • 2 cloves of chopped garlic
  • 1 can of tomato sauce
  • 1 T. of chili powder
  • 1/2 T. of cumin
  • 2 can of kidney beans
  • 1 chopped onion
  • 2 chopped peppers
  • 1 package of McCormick chili seasoning

Cook the ground beef and garlic in a large chili pot until brown. Replace excess fat with tomato sauce! (Much healthier šŸ™‚ ) Add chili powder, cumin, and chili seasoning to pot and mix. Place lid on pot and allow to simmer for about an hour. Once done, add beans, onion, peppers, and, if dry, canned bean juice (or water). Cook for fifteen more minutes, stirring occasionally, and serve!

We had our chili with shredded cheese and dollop of sour cream with a Ā nice slice of Italian bread on the side. Yum!

Caramel Pecan Bars!

It’s been a while since Ziggy and I have baked together so today we decided to put together some yummy Caramel Pecan Bars!



2/3 C. Flour

2 C. Brown Sugar

1/4 t. Baking Soda

1/4 t. Salt

1/4 C. Butter

1 1/3 C. Chopped Pecans

4 Eggs

Caramel Sauce


First preheat oven to 350 degrees, then melt the butter completely and pour in into the bottom of a 13 by 9 pan.

Next, mix all of theĀ ingredientsĀ together into a mixing bowl. Pour into buttered pan and bake for 40 minutes (check occasionally).

Mini Chicken Pot Pies

Yesterday me and Zigs made some yummy Mini Chicken Pot Pies! Not only as the final product awesome, but the pot pie stuffing rockedĀ as a dip with some Ritz crackers!

Here’s what the recipe calls for…….

Baking Mix

– 3/4 cups of Original Bisquick mix

– 1/2 cup of milk

– 2 eggs


– 3 cups of shredded chicken

– 1 cup of peas and corn (frozen of canned)

– A handful of chopped baby carrots

– Half of a medium onion, chopped

– 1 cup of shredded cheddar cheese

– Salt and pepper to taste

– 1 cup of chicken broth


Preheat oven for 375Ā°

In a hot skillet greased with about a tablespoon or so of vegetable oil, add chicken and allow to heat up for about 5 to 7 minutes.

Once the chicken is heated, add onion and broth and allow it to heat until it begins to simmer.

Once simmering, add peas, carrots, corn, and seasonings. Heat until hot and stir occasionally until all broth is absorbed.

Turn off heat and allow cooling for 5 minutes.

Once cooled, stir in cheddar cheese.

(Congrats the delicious stuffing is made!!)

Now, once you’ve made the stuffing, we”ll move unto the batter.

Add allĀ ingredientsĀ together, eggs, Bisquick, and milk, and whisk until thoroughly mixed.

Once mixed, pour about two tablespoons of mixture into each cup of a greased muffin tin.

Add a heaping spoonful of stuffing to each cup, and then top off with another two to three tablespoons of mixture. (This recipe generally makes seven or eight)

Place into preheated oven and cook for 25 to 30 minutes!

(Quick side note- they are easier to lift from the muffin tin once they’ve cool so allow 5 to 10 minutes to cool once they’ve been taken out of the oven!)

P.S, you will, no doubt, have extra stuffing. Crack open the food cabinet, grab the Ritz Crackers and enjoy!

Banana Coffee Cake

Today we made banana coffee cake from one of my mothers old cookbooks. After spilling the flour, creating way more dishes than necessary, and tasty batter getting splattered all over my kitchen, as well as my blue polo shirt- we were able to make a kick butt Banana Coffee Cake!

The recipe calls for…

8oz. pkg. cream cheese, softened

1/2 c. butter, softened

1-1/4c. sugar

2 eggs

3 bananas, mashed

1 t. vanilla

1-1/4 c. all purpose flour

1 t. baking powder

1/2 t. baking soda

Preheat the oven to 350 degrees, mix the first three ingredients together, then add the eggs one at a time followed by the bananas and vanilla. Next come the dry ingredients. Put it all into a 13X9 pan and bake for 20-25 minutes.

We opted to use a 9×9 pan and a loaf pan instead so we could both share a pan with our families. And let me tell you, they LOVED it. It took way longer to cook then the directions say (they were in the oven for almost 45 mins!) but the wait was worth it. We also threw on some brown sugar/cinnamon mixture to give the cake sweetness, as well as crunch. Yum-
